Siopao Pork Asado

Ingredients for the sauce:
2 cups water
1/4 cup soy sauce
1/4 cup cassava starch dissolved in 1/2 cup water
2/3 cup brown sugar
2 tbsp oil
3 tbsp vinegar

  1. In a large bowl, combine the flour, instant yeast, shortening, sugar, and salt. Make a well in the center and add the vegetable oil and warm water. Mix until a dough forms.
  2. Knead the dough on a floured surface until smooth and elastic, about 8-10 minutes. Alternatively, you can use an electric stand mixer fitted with a dough hook attachment and knead for the same amount of time.
  3. Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
  4. While the dough is rising, prepare the filling. Mix the diced pork, soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, Chinese five-spice powder, garlic, and onion in a bowl.
  5. Heat a pan over medium heat and add the marinated pork mixture. Cook until the pork is browned and cooked through.
  6. In a shallow bowl, mix all the sauce ingredients put them in the pan, and let it simmer for 10 minutes.
    Stir in the mixture and cook until the sauce thickens. Remove from heat and let it cool.
  7. Divide the risen dough into equal portions and shape each portion into a ball. Flatten each ball into a circle and place a spoonful of the pork filling in the center. Add a piece of hard-boiled egg, if desired.
  8. Gather the edges of the dough and pinch them together to seal, forming a bun. Repeat with the remaining dough and filling.
  9. Place each siopao on a small piece of parchment paper and arrange them in a steamer basket, leaving space between each siopao to expand.
  10. Steam the siopao over boiling water for 15-20 minutes, or until the dough is cooked through.
