Brown Sugar-Pineapple Pork Chops

Ingredients:
– 4 boneless pork chops
– 1/4 cup brown sugar
– 1/4 cup pineapple juice
– 2 tablespoons soy sauce
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 1 teaspoon ground ginger
– Salt and pepper to taste
– Pineapple slices for garnish (optional)
– Chopped fresh parsley for garnish (optional)
Instructions:
1. In a small bowl, mix together the brown sugar, pineapple juice, soy sauce, minced garlic, ground ginger, salt, and pepper. Stir until the brown sugar is dissolved.
2. Place the pork chops in a shallow dish or a resealable plastic bag. Pour the marinade over the pork chops, ensuring they are evenly coated. Cover or seal the dish/bag and refrigerate for at least 30 minutes, or up to 4 hours, to marinate.
3. Heat the olive oil in a large skillet over medium-high heat. Remove the pork chops from the marinade, reserving the marinade.
4. Add the pork chops to the skillet and cook for 4-5 minutes on each side, or until browned and cooked through. Remove the pork chops from the skillet and set aside.
5. Pour the reserved marinade into the skillet and bring to a simmer. Cook for 2-3 minutes, or until the sauce has thickened slightly.
6. Return the pork chops to the skillet and cook for an additional 1-2 minutes, or until they are heated through and coated with the sauce.
7. Serve the Brown Sugar-Pineapple Pork Chops hot, garnished with pineapple slices and chopped fresh parsley if desired.
