Whether served as a light lunch, a refreshing side dish, or even as a starter for a summer dinner party, this salad is sure to impress with its vibrant colors and harmonious flavors.
Ingredients:
• 2 cups of baby salad greens
• 2 fresh peaches
• 1/8 cup of red onion
• 4 cups of cherries, blackberries, and strawberries
• 1/4 cup of salted pistachios
• Fresh basil leaves
• 8 oz. ball of burrata cheese
• Sea salt and black pepper
• Olive oil or Meyer lemon infused olive oil
• Balsamic glaze
Instructions:
Preparation:
• Slice the peaches and onions.
• Pit and slice the cherries.
• Slice the strawberries and hull them.
Step 1: Lay the leafy greens on a serving platter. Sprinkle some thin slices of red onion on top.
Step 2: Scatter the berries and cherries over the greens. I like to group them together to add pops of color. Leave some space in the center for the burrata.
Step 3: Arrange the sliced peaches in stacks, fanning them out slightly. Place the burrata in the center of the platter.
Step 4: Sprinkle pistachios and torn basil leaves over the salad. Drizzle olive oil all over. Season with freshly cracked black pepper and sea salt.
Step 5: Finish it off by drizzling balsamic glaze across the salad.
You can enjoy this fresh salad with some crusty bread, crostini, or crackers on the side.
